Sweet and Savory Tempeh Tacos
1 tablespoon plus 2 teaspoons olive oil
1 package (8 ounces) tempeh, crumbled
2 tablespoons vegan Worcestershire sauce
3 tablespoons tomato paste
2 tablespoons sesame seeds
2 tablespoons apple cider vinegar
2 teaspoons maple syrup
6 Bibb or romaine lettuce leaves
1) Heat 2 teaspoons of the oil in a large skillet over medium heat. Add the crumbled tempeh and sauté until lightly brown, stirring frequently.
2) In a small bowl, whisk together the remaining oil, Worcestershire sauce, tomato paste, sesame seeds, vinegar, and syrup. Pour the sauce over the tempeh and let the mixture cook for about 3 to 4 minutes or until the sauce is absorbed into the tempeh.
3) To assemble the tacos, place a spoonful of meat on a lettuce leaf and top with the avocado slices.
Binge Magazine: We’re so excited about “The Clean in 14 Detox!” What is the biggest difference in your book versus others?
Melissa Costello: This program is based on eating a lot of yummy delicious food, which is a departure from most cleanse books which are based on starvation and deprivation. I’ve also included daily action exercises to keep focus while breaking sabotaging, lifelong habits so that these new tools can be taken forward as a lifestyle.
BM: What is the most important thing to remember when trying to “detox” your body?
MC: Take really good care of yourself during any detoxing. The body is working extra hard when it detoxes, so it’s important to be gentle on your body during this time.
BM: Can you share with us your favorite clean eating recipe or tip?
MC: My favorite recipe is my Green with Envy Smoothie because of the addition of cilantro which is something most people would never think of putting in a smoothie. It’s light, refreshing and super alkalizing
1-1/2 cups coconut water
1 teaspoon maca (I like the Navitas brand raw maca)
2 handfuls of spinach
1 handful kale
1 cup frozen mango
1/2 frozen banana
5 cilantro sprigs
1 handful of ice, optiona
Blend ingredients together in a high-powered blender until smooth.
BM: Detoxes aren’t always easy- can you give our readers some advice about conquering a detox?
MC: Yes, take it one day at a time with an eye on the bigger picture of optimal health. Know your BIG WHY and stay focused on that, even when you are experiencing what I call, The Detox “Icky’s”
BM: What is your favorite part of detoxing? Why?
MC: My favorite part is the energy and lightness I feel after a detox. It reminds me how good I can feel when I put only pure, clean food in my body.
