James Beard Foundation: Celebrity Chef Tour

Details: The Celebrity Chef Tour began in 2004 as a way to bring the unique experience of dining at New York City’s historic James Beard House to cities around the country. At each Celebrity Chef Tour dinner, some of the nation’s top chefs come together to create a fantastic multi-course meal.

Like at the James Beard House, guests have the rare opportunity to interact with the participating chefs while enjoying the luxurious atmosphere of our nation’s finest restaurants. Each Celebrity Chef Tour meal is a work of artistry and craftsmanship that you won’t soon forget.

Chef Bernard Guillas of The Marine Room in La Jolla, CA was nice enough to give us an inside scoop of what it’s like to be part of this great event.

What is it like being part of the James Beard Foundation Celebrity Chef Tour?

Supporting and being part of the James Beard Foundation Celebrity Chef Tour is an honor and a privilege. It is a wonderful vehicle to share my passion and artistry with culinarians and food enthusiasts.

Where do you draw inspiration for your dishes?

I am energized by the beauty of life, the art of cooking, the discovery of travel, cultures and cuisine. It is an exciting, unpredictable and rewarding voyage.

What is your favorite thing to make?

Sustainable and organic ingredients are the focus of my cuisine. I enjoy the element of surprise when blending spices and incorporating them into new recipes for my restaurants.

It must be fun collaborating with other chefs and mixologists for this event, do you find yourself drawing inspiration from them as well?

Chefs and mixologists are wizards in their field creating an unforgettable journey for all to enjoy and remember.

What is your favorite item on your menu at The Marine Room?

These are the two items that everyone is crazy about:
Trilogy of Lobster, Tuna, Scallops
Green papaya, ginger consommé, sesame crisp, caviar pearls
Heirloom Bacon Wrapped Monkfish
Honey spiced farro, fennel confit, agrumes absinthe

The Celebrity Chef tour goes all over, have you had the opportunity to try items from Chefs in other states? If so, which is your favorite?

I have had the privilege of working so many talented chefs in past James Beard events. To choose a favorite dish and chef would be impossible as everyone brings their best game for the amazing events. In other words…I love them all.
