Chef Ethan Kostbar of Moderne Barn Shares His No-Meat Grilling Recipe

For our readers who won’t be able to make that trip, Chef Ethan Kostbar was kind enough to share the recipe for his Summer Grilled Peach Greek Salad, but if you can get there, we recommend it!

A healthy, no-meat grilling recipe will help you find balance this summer, eat it often without the guilt! Make it for dinner, or a party, there’s no denying this will instantly become a fan favorite.


1 ea) Peaches, grilled (cooked) slice wedges
1 ea) Tomatoes, slice wedges
1/2 ea) Red Onions, thinly slice
1/4 C) Feta Cheese, crumbles
1 ea) Avocado, sliced
1 ea) Cucumbers, sliced
1/2 C) Castellino Olives
1/2 lb) Baby Arugula
1/2 t) Oregano, dried
6 T) Extra Virgin Olive Oil
3 T) Red Wine Vinegar

1. Grill Peaches until tender and cover
2. Remove skin and slice
3. Cut all the veggies and place in bowl
4. Add baby arugula
5. Add oil and red wine vinegar
6. Toss lightly add Salt and Black Pepper
